What Are The Ingredients For Eggplant Brinjal Recipe?The ingredients for Eggplant Brinjal are: 1 eggplant, unpeeled and dice into 1" chunks2T olive oil 2 medium onions, diced 5 cloves garlice, minced 1 medium zucchini, diced 1 jalepeno pepper, seeds removed and diced 1 can tomato paste 1 cup water 1T ginger root, minced .5t sesame seed .5t fenugreek .5t cumin seed .5t coriander, ground .5t chili powder, no salt added .5t tumeric How Do I Make Eggplant Brinjal?Here is how you make Eggplant Brinjal: Add 1T olive oil to wok at medium high heat. Then add eggplant and stir while it browns, about 5 minutes.Remove from wok and set aside.Add another 1T of oil and stir in cumin, sesame seeds and fenugreek and cook for about 2 minutes until the seeds turn golden brown.Reduce heat and add in ginger and garlic and stir for a few seconds. Then add chopped zucchini and onions and cook for another 10 minutes.Mix in tomato paste, water, chili powder, coriander and tumeric and stir until blended. Then stir in eggplant and cook for another 5 minutes until eggplant is tender.
