I only got to watch the last few minutes of Rachel Ray show on her Veggie night dinner. No idea what she used for seasoning but, I do know she used eggplant, spinach, red pepper, hummus and walnuts. Put 2 and 2 together to get this recipe and Wow! it tastes awesome. O course it would - look at all the fat! The food network did not have the recipe........Here's how I prepared. I will only make it as a treat due to the sodium and fat contents. My only satisfaction being its all good fat.

Sabra Hummus Peppadew, 1 cup divided
McCormick spicy Montreal steak grill mates seasoning, 2 serving to your taste.
Walnuts, 1.3 oz (18 halves) toasted and divided, one 1/2 coarsely chopped I mixed with spinach and peppers second 1/2 ground to sprinkle on top.

Here is how you make Rachel Ray's Mediterranean style Eggplant Steaks:

Sprinkle Mrs. Dash on eggplants. Use a bit of Olive oil to grease toaster oven's pan or use Olive oil spray and lay the eggplant steak on the pan. Heat a sauce pan and brown chopped garlic clove in Olive oil, sprinkle chopped onion and sautee till transparent. add the pepper pieces and spinach and sautee some more till the liquid from ice is gone. Sprinkle McCormick seasoning on top and mix well. Let cool while you toast the coarsely chopped walnut that you stir into the spinach. Layer the spinach- pepper- walnut mixture on top of eggplant, dredge with hummus and sprinkle ground walnuts for crispy taste. Bake in 375 degrees hot toaster oven for 25 minutes or until eggplant is tender. Oh sooo worth the fat! My hubby who does not like eggplant, took one bite for taste and ate the whole thing!
