Here is how you make Bob's Eggplant Patties:

Make eggplant salad. Cut an "aleph" (x) on top of a medium eggplant. Put under broiled (cut side up) or on grill (cut side down). Leave long enough for the eggplant to burn, at least 20 minutes. Turn eggplant over and continue to cook about the same amount of time. Remove from heat when the eggplant has become very soft. Remove pulp from the skin once cool. Mash pulp. Mix with 2 tsp. oil, 1.5 Tbsp. white vinegar, and 1/8 tsp. black pepper.Beat egg. Mix in matzo meal, eggplant salad, 2 tsp. oil, 1 Tbsp. white vinegar, crushed garlic and remaining black pepper.Heat remaining oil in a non-stick pan. Add scallions and the eggplant mixture formed into two patties.
