2 large potatos
1 medium onion
1 clove garlic
1 eggplant
3 tbsp oil (preferably grapeseed but olive also works)
2 tbsp Dill
2 tbsp pepper


How Do I Make Eggplant Succotash?

Here is how you make Eggplant Succotash:

Heat oil in large skillet on medium heat. Chop potatos into small chunks (think less than 1/2 inch). Add to oil. Chop onion into similar size, add to oil. Mince garlic and add to oil. Stir ingredients to help brown on all sides and continue to stir every so often. Chop eggplant into similar sized cubes, add to oil. Add dill, pepper, and any other spices to taste.
