1 1/2 cups white kidney beans
1/4 tsp Colgin Mesquite liquid smoke
1/2 tbsp nutritional yeast flakes
1/4 tsp garlic powder
1/2 tsp onion powder
1/4 cup corn starch
1/2 cup cooked spinach
1/4 cup Mexican style shredded cheese
1 tbsp Parmesan
Enough water to moisten. (About 1/4 cup. I used the water off of the beans.)

Here is how you make Empanadas:

In a blender, mix beans, liquid smoke, nutritional yeast flakes, garlic powder, onion powder, spinach, and water. Scoop into a bowl. Add the corn starch and cheeses. Heat a little oil in a skillet. Place 1/3 of the mixture on one end of a tortilla wrap. Roll the wrap around the mixture tucking the ends in. Fry the wraps in the hot oil until golden brown. Serve with salsa.
