This is always a favorite among friends. I actually use Healthy Request soup to avoid the MSG, but you could substitute the soup for reduced fat for fewer calories. Also, I do not put meat in my enchiladas, but you could if you want. Adjust nutritional info accordingly. Also, I suggest using a blender with a glass container, not plastic. What Are The Ingredients For Green Enchiladas Recipe?The ingredients for Green Enchiladas are: 6 jalapenos (or as many as you can handle)4 10.75 oz cans condensed cream of mushroom soup approx 30 corn tortillas approx 3 cups reduced fat colby or cheddar cheese garlic powder (approx 1 tbsp) salt (to taste) pepper (to taste) about 1 cup water How Do I Make Green Enchiladas?Here is how you make Green Enchiladas: 1. Pop the stems off the jalapenos and boil them whole until they are soft (approx 10-15 minutes).2. In a blender, combine water, jalapenos, condensed soup and garlic. Blend until smooth. 3. Add salt and pepper to the sauce until you like the taste.4. Spoon a layer of sauce into a 13x9 inch pan.5. Each layer consists of 6 corn tortillas. Dip each tortilla into the sauce, then lay them in the pan (they will overlap, but the overlapped parts will have sauce on them).6. Ladle some sauce over the tortillas.7. Sprinkle with cheese.8. Repeat steps 5,6,7 until you have used up the tortillas, cheese, and sauce, finishing with sauce and cheese on the top.6. Cover loosely with foil and bake at 350 for about 30-45 minutes (or until hot throughout). 7.
