* La Victoria Salsa Ranchera, Hot, 4 tbsp
* Corn Tortillas, 4 medium (approx 6" dia)


How Do I Make Vegie Fajitas?

Here is how you make Vegie Fajitas:

Chop one or two zucchini and one or two summer squash into bite size pieces. Saute the onion in the olive oil, adding squashes when onion is clear. Season with salt, pepper and any green herbs you like. I use basil, oregano and thyme. Steam the corn tortillas (place up to 4 tortillas between a single dampened paper towel that has been folded into quarters so that you have 2 layers of towel around the top and bottom of the pile, then place in a plastic baggie and microwave for 1 m inute) or you can use whole wheat tortillas and just heat them in a dry pan. Serve 2 tortillas per person and let them load up with the vegies and 2 TBSP salsa. Also good with fat free sour cream.
