I created this recipe after a special request from a Personal Chef Services client, and it's a big hit with her family. Yes, you can use bottled spaghetti sauce, but it's so easy to make a basic sauce from scratch with higher quality ingredients and it gives you something to do while the water boils for the pasta, so it's worth a little extra work.

Oven: 350F

1 package manicotti, cooked for 7 minutes, drained and sprayed with cooking spray to prevent sticking
2 cups organic low fat cottage cheese
1/3 cup organic reduced fat or fat free ricotta
1 whole egg
1/8 tsp Tony Chachere's ("Tony's")
1 Tbsp olive oil
4 cloves garlic
2 cups crushed tomatoes
1/4 tsp salt
1/4 tsp Tony's
Italian seasoning (to taste/optional)


How Do I Make Low Fat Manicotti?

Here is how you make Low Fat Manicotti:

To make the sauce, heat the olive oil in a saucepan then add the garlic (either whole or lightly pressed) and allow to cook till fragrant, then add the tomato and seasonings. Allow to simmer for at least 5-10 minutes. While you make the filling and fill the manicotti.Combine the cottage cheese, ricotta, egg and Tony's in a bowl. To fill the manicotti, hold one open over the bowl of filling and try to slightly pinch the bottom closed, and use a small teaspoon to fill with about 3 spoonfuls of filling. Place the filled manicotti in a sprayed 9 x 13 or larger baking dish.Once they're all filled, pour the sauce over the top and spread around to make sure all the pasta is covered with sauce.
