Cover with water and set to boil until tender. 4) In a food processor, combine cooked cauliflower, 1/2 cup chopped onion, 1 cup 2% milk, 2 tbsp flour, and 1/2 cup Parmesan cheese. Puree. (consistency should be sauce-like, not liquidy).5) Cook one bag of fresh spinach (1 used a spinach/arugula mix) with 3 cloves minced garlic in 1-2 tbsp of olive oil, until greens are wilted. 6) In a 9x13 pan, first spread a thin layer of the cauliflower puree, then layer potatoes, zucchini, greens, puree and mozzarella. Put another layer of potatoes on top of the mozzarella and repeat the layering until all the ingredients are used up (likely 2 or 3 layers, depending on how thickly you slice the veggies). The top should be a layer of potatoes, topped with puree. 7) Cook covered with foil for 45 minutes.
