Mix dry ingredients first, then mix wet ingredients in a separate bowl. (I add one mini-cube of adobo bouillon to the water, but this ingredient could not be located in the database.) Add the wet to the dry ingredients, mix thoroughly, and knead for a few minutes. Let the dough rest while bringing a pot of salted water to a simmer. (I sometimes add an onion, more adobo bouillon, and other seasonings to make the simmering liquid into a broth -- it is strained off after cooking.) Cut the seitan into cubes or strips and drop into the simmering liquid. Simmer, covered, on low heat for an hour. Turn off the heat and leave it to cool before straining.
