Rest batter in the refrigerator for 10-15 minutes. Pre-heat a non-stick skillet on medium heat. Brush with vegetable shortening, oil or butter. Pour a scant 1/4 cup batter into pan and swirl pan to spread batter into a thin layer. Cook until lightly browned, about 2-3 minutes. Flip over and cook another 2-3 minutes. Turn out onto a piece of waxed paper. Heat may need to be adjusted so the cr?pes don?t cook too fast or slow.
