It's hard to find a way to make french toast when you are low carbing AND glutenfree. I think this recipe is pretty dang good, and I thought these babies tasted remarkably similar to the french toast I used to make with whole wheat sandwich bread. Enjoy and please comment if you make it!

Bread Ingredients
1/4 cup Ground Flaxseed/Flax meal
1/4 teaspoon baking powder
1/4 cup egg whites
1/4 tsp. cinnamon
1 T almond milk
1 drop EZ-Sweets (liquid splenda)

French Toast Coating:
1/4 cup egg whites
1/4 tsp. vanilla (Frontier no alcohol is good)
1/4 tsp. cinnamon
2 drops EZ-Sweets
dash of salt & pepper (or teeny bit of cayenne)

Cooking:
1 pat butter per slice - about 2 tsps. for the recipe - this really makes a difference in flavor and texture!

Traditional Topping:
1 T Walden Farms SF pancake syrup - if you don't want pancake syrup flavor use something more exotic like hazelnut, huckleberry, raspberry, etc, etc. DaVinci makes tons of SF syrups with 0 carbs.
1 tsp. (small pat) butter
1/4 tsp. cinnamon, dusted on

Diner-style topping:
Sprinkle or two of cinnamon, plus more for plate
Sprinkle of powdered sweetener (Ideal, Truvia, PureVia, etc.)
2 T whipped cream (I use the stuff in a can, just look for the lowest carb count possible - 1 carb is the best I have found)


How Do I Make Truly Low Carb French Toast! Glutenfree, No Soy?

Here is how you make Truly Low Carb French Toast! Glutenfree, No Soy:

I make the bread in a small square container, but you can experiment and use different shaped ones. Don't make it in anything plastic, though, so as not to get harmful BPA into your food.METHOD:Spray the baking container to help it be more nonstick. (I use organic coconut oil spray from Spectrum) In separate bowl mix egg thoroughly with sweetener & almond milk. Add dry ingredients that you have mixed together separately (I do it in the measuring cup). Mix throughly with a fork. Cover with glad wrap, cut a small slit in wrap. Microwave on high for about 1 minute 10 secs. Microwaves may vary. Check on it. Do not over cook as it will toughen if overcooked. Flip out to cool and wash out dish, as the residue gets really hard to clean if left to dry.While the bread is cooling, mix together the coating. Once cool, carefully slice the bread into two pieces with a good serrated knife and dip each piece into the coating, flipping to coat both sides. Leave pieces in the dish to finish absorbing the coating, and heat a nonstick pan at medium. Put a small pat of butter in the pan, and when sizzling, put in your french toast pieces. I pour the leftover coating onto the tops. Allow to get nicely browned before flipping, brown again, and transfer to a warmed plate.Serve with butter, pancake syrup, or any flavored SF syrup you like, and dust it with the cinnamon. For the diner style topping (not in the nutrition info FYI) top these with a couple of tablespoons of whipped cream, dust with a little powdered sweetener and another shake or two of cinnamon to give it that authentic look! Enjoy. I think these taste pretty authentic, and the texture is dense like a good wholegrain bread.
