2 thick slices of a medium onion
1 small tomato, slice into thick slices
1oz shredded carrots (I use the shredded in the bag that I

2 tbsp evaporated milk
2 tbsp ricotta cheese, part skim

Here is how you make Frittata for one or two:

I a small bowl crack eggs and add evaporated milk, beat slightly with a fork, set aside. In a nonstick skillet with lid. melt butter on med high. Add onions and carrots and cook for abt 2-3 minutes, until soft and onion begin just to brown a little on edge. Push veggies to side of pan and add the thick sliced tomatoes. Continue cooking for another few minutes, turning tomatoes (just want to warm them not cook them). Remove tomatoes from pan and scatter the onions and carrots in pan. Turn stove down to medium and add eggs. Take spatula and push eggs toward the center letting the uncooked egg spill out and cook. When eggs are soft and still have a little liquid in them left, turn stove off and place tomatoes on top of eggs; dollop the ricotta on top in 2 or 3 places, cover to let cheese melt a couple of minutes or at this point you can put under the broiler oven and brown slightly or until center of eggs are set.
