How Do I Make Fry Aloo?

Here is how you make Fry Aloo:

Peel the potatoes, then wash and slice about ⅛ to ? inch thick. Peel and crush the garlic, slice the onion and pepper. Set aside.In a heavy pot, add the oil and allow to heat on medium to high heat. As the oil heats up add the onion, garlic and pepper and allow to cook for a couple minutes. When the onions start turning brown, drain the sliced potato add them to the pot and mix. Turn down the heat to medium-low and cover the pot. Allow to cook covered for about 20 minutes stirring every 5 minutes. Potatoes will begin to turn brown and stick to the bottom of the pot.
