1 chicken boullion cube
3/4 cup water
2t olive oil
1t minced garlic
1/2cup diced onion
1/2 cup garbanzos (chickpeas)
1/2 cup whole wheat couscous (dry)
1/3 cup cherry tomatoes (halved)
1/4 cup reduced fat feta cheese

Here is how you make Garlic and Olive Oil Couscous w/Garbanzos and Tomatoes:

Boil water and dissolve boullion cube in it.Heat oil in small saucepan over medium heat. Add garlic and onion and saut? until garlic is fragrant and onion is beginning to brown and become translucent.Add garbanzos and heat for a few more minutes. Add couscous and prepared chicken boullion. Bring back to boil, cover and remove from heat. Allow to sit for 5 minutes for couscous to absorb liquid.Fluff couscous and stir in the cheese and tomatoes.
