Feta (or Goat) Cheese, 1/3 c crumbled

Here is how you make Kelly's Mediterranean Frittata (Low-Carb/Gluten Free):

Preheat oven to 400 degrees. Melt butter in microwave, then pour into pie plate (glass preferred) and liberally coat bottom and sides. Spread fresh spinach along bottom of pie plate, on top of butter. In a separate bowl, add diced onions, zucchini, mushrooms, and tomatoes, and toss lightly to combine. Pour vegetable mixture into the pie plate (flattening gently), and then sprinkle with the two cheeses; set aside. Re-using the bowl used for the vegetables, beat the 4 eggs, and then add the half & half and all spices to the bowl and blend. Pour liquid mixture over the vegetables in the pie plate, and bake at 400 degrees for 35 minutes (top will puff slightly and brown). Let stand 10 minutes before serving, to allow eggs to set.
