Add all the dry ingredients except the dried fruit and mix so that all are well coated. Pat into a sheet pan that is lined with a SilPat or parchment paper and pat down well.Bake for 15 minutes, then rotate pan. Bake an additional 10-15 minutes, until golden brown. Remove and place pan on a cooling rack and allow to cool completely. When cool, break into chunks in a large bowl and add the dried fruit. Bottle in glass jars.
