1/3 cup maple syrup or honey
1/4 cup olive oil
1 t vanilla extract (and/or 1 t. almond extract, if desired)
2 cups assorted nuts (pecans, pumpkin seeds, flax, sunflower, almonds are suggestions)
1 cup flaked coconut
1 teaspoon cinnamon
1 teaspoon nutmeg

Here is how you make Dreamword's Granola:

Pour 4 cups old-fashioned oatmeal into large roasting pan (9x13). Heat oats in 350F oven for 5 minutes. Remove from oven, stir, heat 5 minutes more.Heat together maple syrup or honey and oil. Remove from heat and cool, then add vanilla extract.Combine together nuts and coconut. Add to heated oats and mix thoroughly. Pour honey-oil mixture over oat mixture. Mix thoroughly.Add cinnamon and nutmeg. Return to oven, bake at 350F for 20 to 25 minutes, stirring about every 10 minutes for even browning. Cool and store in an airtight container.
