Mix all the dry ingredients except salt in a big bowl. In smaller bowl, whisk together maple syrup, olive oil, and salt, beginning slowly as it may splatter. When this is combined, pour on top of oat mixture and mix until all is "pleasantly sticky."Spread in your largest baking pan (or two) and bake at 225 degrees for 3 hours. Stir and return to the oven for another hour, then TURN OFF THE OVEN. and leave granola in oven for 4 hours or overnight.
