Heat 1 Tb. oilve oil in a large saucepan, add spinach and cooke till wilted, remove to the baking dish. Heat another Tb. olive oil and add the chard, cook till wilted, remove to the baking dish. Do the same with the zucchini. Add the last Tb. olive oil to the pan, saute the garlic. onions, and muschrooms till the onions are translucent and mushrooms have reabsorbed their juices, add to casserole. Add the rice to the dish and stir well to combine all of the vegetable. Place the dish in the oven and bake for 20 minutes. Remove and pour the eggs over the vegetables. mix togther the parmesan and bread crumbs and sprinkle over the top.
