Wash well and cut up collards, thinly sliced. (to do this roll leaves like a cigar and slice thinly). Using a stock pot add EVOO and onions, fry until translucent. Add chopped tomatoes and cook for additonal 4 mins. Add chopped collard, (2 handfuls at a time and allow them to wither a little incorporating them into the tomato and onion). Add 3 cups of water and seasonings. Cook until tender and water evaporates.
