1 sweet red pepper
~ 1 cup sliced summer squash
~ 1 cup sliced zucchini
1/2-1 large onion, sliced
1/2 cup fresh cilantro, chopped coarse
olive oil spray
salt and pepper to taste

Here is how you make Grilled Spring Vegetables:

*Prep your grill, or preheat oven broiler to at least 450 degrees.(I cover the grill with foil to keep from making a mess. Ymmv).*Lightly mist the vegetables with olive oil spray. Begin with the onion and eggplant slices. Lay them in a single layer and add salt and pepper to taste. Allow to grill until the edges are nicely browned (approx. 10 minutes), then turn them with a spatula.*Add the other vegetables (except the cilantro) in a single layer, or as thin a layer as your grill size will allow. Salt and pepper as above. Turn once when tops are browned/blackened (approx. 10 minutes).*About 3 minutes before removing the vegetables, toss the chopped cilantro leaves on top.*Enjoy the deliciousness (after removing from grill, of course!).Makes 2 meal-sized portions.
