1 small yellow squash sliced
1 clove garlic minced
1/4 medium onion chopped
1 Tbsp olive oil

How Do I Make Karen's Summer Hash?

Here is how you make Karen's Summer Hash:

Boil the potatos. While they are cooking slice and chop the rest of the ingredients. Heat olive oil in skillet and add onion, garlic and squash and saute. Slice the boiled potatoes into the skillet mix with other ingredients and spread over the bottom of the pan to brown season with salt and pepper. Cover for a few minutes, then turn ingredients over and cover to contiune to brown until the potatoes are slightly browned.Serve up onto two plates. This is also great with a fried egg, over medium put on top.... Spray a non-stick skilllet with PAM, break the egg, flip over when whites sets enough and slide over the summer hash when done.
