In a small bowl, beat the egg white until frothy. Add the coconut oil, vanilla, and maple syrup and stir until combined. Pour over the oatmeal mixture and mix thoroughly. Use your hands to do this! Cover a baking sheet with parchment paper, and dump the oatmeal mixture onto the sheet and spread it out. Bake in a preheated 300 degree oven for 15 minutes. Stir, and continue baking in 10 minute intervals, stirring each time you check it, until golden brown. Add the almonds and cherries and continue to bake for a final 10 minutes. Remove from oven and allow to cool to room temperature.
