What Are The Ingredients For Ken's New World Hummus Recipe?

The ingredients for Ken's New World Hummus are:

(1) 15.5 oz can of garbanzos
1/2 can Artichoke hearts (5 hearts)
1 avocado, w/o seed or skin
2 or 3 diced jalapenos w/o seeds or stem
1 Anaheim pepper, diced
1 cup roasted red bell peppers
8 to 10 cloves of garlic, minced
1.5 tbsp minced roasted garlic
1 tbsp ground cumin
1 tbsp celery seed
1 tbsp paprika
1 tbsp ground chipotle chili pepper (optional)
1 tbsp onion powder
1/2 minced red onion (optional)
1/2 cup washed & dried spinach leaves (or canned)
juice of 1/2 fresh lemon
1 tbsp Louisiana hot sauce (optional)
6 red raw radishes diced
1 tbsp olive oil (optional)




How Do I Make Ken's New World Hummus?

Here is how you make Ken's New World Hummus:

Makes about 20 appetizer, snack, crudites & pita dip servings.Start by draining: Artichoke hearts, roasted red bell peppers, spinach leaves (if canned, wash & dry if fresh), and garbanzos. It's best to put these in a sieve over a large pot or the sink to drain for about 20 to 30 minutes. Mince: garlic, radishes, jalapenos & Anaheim & onion (if used) while the draining occurs. I use an 11 cup food processor for this, but it can also be done by hand or a large blender.When the draining is done add the garbanzos to the food processor and pulse adding the: roasted bell peppers, spinach, and artichoke hearts, as you go. When these are all finely minced let the food processor run for about 1 minute to puree. Add all the spices: cumin, celery seed, onion powder, paprika, ground chipotle chili powder and Louisiana Hot sauce, then run the food processor to blend these into the puree. The avocado goes in next, first pulsed & then pureed to blend it in, then the olive oil (if using) and finally the lemon juice. The puree should be somewhere between the consistency of thick oatmeal and peanut butter depending on how well everything was drained. If the puree is loose, you can always add Italian bread crumbs and or more ground spices. It can also be put in the freezer for 20 minutes to stiffen it up but should at least go into the fridge to cool it while the flavors blend of at least 20 to 30 minutes.For the purists, please note that I have omitted the sesame seed paste (Tahini) to reduce the calories & the fat without loosing the taste and I have left the olive oil as optional for the same reason.
