Using an Instant Pot, put the 4 cups of water, 1.5 teaspoons salt and 8 oz. of dried chick peas inside and stir to dissolve the salt. Cook on manual high pressure for an hour, allow to self-vent for 20 minutes before finishing the venting yourself. Drain chickpeas, reserving at least 3/4 cup of the cooking water.*2. In a large food processor, process the chick peas, cooking water, an additional teaspoon of salt, tahini and lemon juice until smooth (you may need to stop it occasionally and scrape down the sides). 3.
