1T chili oil
2T dried chili pepper flakes

Here is how you make Hummus a la Texas:

If you're using dried chickpeas, soak 'em overnight (lower salt). Otherwise have cans of chickpeas drained and well rinsed.1. Put chickpeas (reserve 1/4C), 1/2 the olive oil, chili oil and flakes, cumin and the lemon juice into a food processor.2. Turn it on. Add olive oil until the contents are fully mixed. If you like a creamy texture, keep it on until it's to your liking. Put it into a bowl. 3. If you want tahini in the middle, make a little divot in the middle and pour some in (not in this recipe or calorie count)4. Take the remaining chickpeas and line the side of the bowl. Sprinkle paprika and zaht'r all around, then sprinkle the pine nuts. Use the rest of the reserved oil to top the dish.This will keep in the fridge for at least a week.
