1/4 cup Italian parsley, chopped

Combine carrot, onion, celery, peppercorns & cinnamon in a "bouquet garni" & suspend in a saucepan. Add dried lentils & cover with water. Bring to the boil & simmer for 30 minutes or until tender but with a little bite. Drain & discard "bouquet garni".Add lentils to a large bowl with the garlic, capers, tomatoes, olives & parsley. Combine olive oil & vinegar & whisk. Dress lentil mixture, season to taste & toss. Set aside.Slice haloumi into about 8 pieces. Fry on both sides in a hot frypan until golden.Serve haloumi on a mound of the dressed lentils, topped with a little more parsley.Serving Size:?Serves 2 as light meal
