This is a tasty variation of Jambalaya that is a favorite in my house. It takes awhile to make but it is so easy and you don't have to babysit it much during the cooking time. The rice is cooked in the dish so this is not a soupy recipe. Be creative with the spices! If using regular stewed tomaotes then add some italian seasoning. What Are The Ingredients For Meatless Jambalaya Recipe?The ingredients for Meatless Jambalaya are: 1 Tbsp Canola Oil1 Tsp minced garlic 1 Green Bell Pepper, chopped 1 Yellow Onion, Chopped 1/2 Tsp Fennel Seed, Crushed 1-2 Tbsp Chili Powder 1 Tsp Cumin 1/2 Tsp Cayenne Pepper or to taste (optional) 15.5 oz can Italian Style Stewed Tomatoes 8 oz can tomato sauce 2 cups water 1 cup uncooked long grain white rice 16 oz can red beans, rinsed & drained 15 oz can butter beans, rinsed & drained salt & pepper to taste How Do I Make Meatless Jambalaya?Here is how you make Meatless Jambalaya: Heat oil over medium heat. Saute onion, pepper & garlic in oil for 8 minutes or until tender. Add spices and cook for about one minute more stirring constantly. Add stewed tomatoes, tomato sauce & water & heat to boiling. Stir in rice, cover and reduce heat to low. Simmer for 30 minutes or until water is absorbed and rice is tender, stirring every 10 minutes or so. Add beans and cook an additional 5 to 10 minutes or until heated through. Salt & pepper to taste.
