1 (15oz) can no salt added tomato sauce
8 corn tortillas, cut into quarters
1 can fat free refried beans
1/4 cup black olives, sliced
1 roma tomato, diced
1/3 cup fat free cheddar cheese, shredded


How Do I Make Enchilada Lasagna?

Here is how you make Enchilada Lasagna:

1. Preheat oven to 350 degrees. 2. Heat oil in a large pan over medium high heat. Once hot, add the red onion, red pepper, garlic and corn and cook just until the onions become translucent, about 4 - 5 minutes. Stir in the spinach and half the taco seasoning packet and remove from the heat.3. Add the refriend beans to a small saucepan over medium heat. Add remaining taco seasoning and stir until well combined.4. In an 8?8" baking dish, start with a layer of the tomato sauce, 1/3 of the salsa, a layer of the corn tortillas, 1/2 the refried beans, 1/2 of the veggie mixture, a touch of tomato sauce and a little salsa.Repeat this layer once more, then top with the corn tortillas again, and the rest of the tomato sauce and salsa. Finally, finish it off with the cheese, olives and tomatoes.5. Bake at 350 degrees for 15 - 20 min, just until the cheese is bubbly and slightly browned. 6.
