1 onion diced
1 cup of carrot and potato, diced
1 chicken or vegetable stock cube - in 250ml of hot water
tin of chopped tomatoes
pineapple chunks in juice


How Do I Make Lentil Curry?

Here is how you make Lentil Curry:

First add the lentils to a pan with the stock and water, also add a pinch of the spices. leave to simmer for 15 minutes untill the lentils are soft. Meanwhile chop your vegetables, I like to place the diced carrots and potato in a sealed dish and blitz in the microwave for a couple of minutes to speed up the cooking process. Add the ginger, chilli, and garlic to a wok and cook for a few minutes. Now add your chopped vegetables of onion, carrot and potato. Now add the remaining spices and tin of chopped tomatoes, also add the pineapple chunks. Check the lentils to see if they are soft, when they are, add to the wok. Stir and lower the heat, if you need more liquid, add the pineapple juice slowly. Now spoon in some plain yogurt, and take off the heat.
