Cook lentils for 40 minutes (or more).Drain and move into a large mixing bowl.Sautee onions in oil, on medium heat, until soft.Add the mushrooms and sautee for 3-4 minutes more. Mix with lentils when ready, and add condiments. Mix until blend is somewhat tight, but moist too.If it ends up a little too moist, thicken with some more breadcrumbs.
