If desired, sprinkle with dry bread crumbs (this is not included in the nutrition data).Put lentils, water and bay leaf in a small saucepan over low heat and simmer very gently until lentils are tender and all the liquid has been absorbed (approximately 20 minutes).Remove from heat and discard bay leaf. Preheat oven to 375?F.Add grated cheese to the lentils together with onion, mushrooms, fresh bread crumbs, parsley, lemon juice, egg, salt and pepper. Mix well. Spoon mixture into the loaf pan and smooth out the top.Bake uncovered for 45-60 minutes until firm and golden brown on top.
