Here is how you make Lentils with Aromatics:

in a sauce pan over medium heat, bring 3 cups of water to boil with lentils 1 garlic clove minced, 1 bay leaf, and one shallot chopped. Once boiling cover and let simmer on low for 20-30 minutes till lentils are tender. In a large saute pan, heat olive oil, chop and add all other vegetables. Leave the leaves of the celery and chop them as well, they add a wonderful flavor. Saute the vegetables on low till they are soft, but not brown. Once tender add broth and let simmer. Drain lentils and add them to vegetables, mix and let simmer for another 5 minutes. salt and pepper to taste.
