2 Cups Vegetable Broth
1/2 Cup French Lentils
68 g (1 medium) carrot sliced into 1/8" rounds
217 g (1 large) onion sliced 1/8" thick
2 Tbsp Canola Oil
75g (1 large head) garlic
1 Tbsp Rosemary
170 g (1/2 small package) frozen spinach
1/4 tsp each salt, pepper, and coriander
1/2 tsp. cumin
1/2 Cup Balsamic Vinegar


How Do I Make Lenny Leonard Lentils?

Here is how you make Lenny Leonard Lentils:

Rinse lentils and add to vegetable broth in medium saucepan. Bring to a simmer over med-high heat, reduce to a low simmer over med-low heat.Heat the canola oil in a pan over med heat. Add onions and carrots and caramelize slowly over medium/med-low heat until browned.Wrap garlic in foil with olive oil and rosemary. Roast in oven at 325 degrees until completely softened (about an hour).In a small saucepan heat balsamic on lowest setting and let reduce to half the amount. Set aside. When most of the liquid has cooked out of the lentils add 1/2 a package frozen spinach directly to the saucepan. Turn heat up slightly and cook until thawed and heated through. Most of any liquid given off should evaporate.When the garlic is finished roasting, remove from outer skins and squeeze the soft garlic into the lentil/spinach mixture. At this point add all your seasonings. When onion/carrot mixture has caramelized add to the rest of the mixture. Plate the lentils and drizzle 1/4 of the reduced balsamic over the top.Can serve over whole grain Wasa crackers if you'd like.Serves four (1/2 cup serving size)Number of Servings: 4Recipe submitted by SparkPeople user PIXIEFIRE.
