Quick and easy. Makes a great lunch simply served with mixed leaf salad or add some mixed leafs and poached egg or salmon, trout or mackrel for a super evening meal. What Are The Ingredients For Lovely Lentils Recipe?The ingredients for Lovely Lentils are: 200 grams/1 cup puy lentils1/2 tbsp olive oil 2 carrotts finely diced 2 celery sticks finely diced 1 clove garlic crushed 25g/3 or 4 sundried tomatoes in oil, drained and finely chopped Salt and pepper to taste 500mil Marigold Swiss Vegetable Bouillon or good quality vegetable stock Bay Leaf How Do I Make Lovely Lentils?Here is how you make Lovely Lentils: Add Olive oil to pan.Finely dice carrotts, celery and sundried tomatoes and add to pan.Crush or finely chop garlic add to pan.Make up 500mil vegetable bouillon/stock as per instructions on packet.Cook vegetables in olive oil for approximately 5 minutes.Rinse puy lentils in cold water, drain and add to vegetables cook for further 2 minutes.Add Bay leaf and vegetable stock bring to the boil then reduce heat so that just simmering.Cook for 15-20 minutes or until Lentils are soft but still have a bite to them.Serve with mixed leaf salad, cherry tomatoes and if your feeling like spoiling yourself add some poached salmon, mackrel or trout or a poached egg on top.Enjoy!Number of Servings: 2Recipe submitted by SparkPeople user MEXICANWAVE2009.What's The Nutritional Info For Lovely Lentils?The nutritional information for Lovely Lentils is:
