Bring 2 quarts of water to a boil. Remove outer leaves from sprouts and trim ends of base. Quarter sprouts vertically, leaving core intact. Add sprouts to boiling water and cook for about 3 minutes or until fork-tender. Drain and transfer to enough cold water to cover them. Set aside.Heat pan sprayed with cooking spray. Cook onions until softened. Add the sprouts and cook until heated through. Season with salt, pepper and nutmeg.
