Wash & rinse bean sprouts, drain & rinse noodles. Pat noodles relatively dry.Saut?e garlic, shallots and tofu in oil until aromatic and tofu begins to brown. Add noodles. Stir briskly to avoid sticking. Add vinegar, sugar, fish sauce and cayenne pepper. If still very liquid, raise heat.Add cooked chicken, shrimp or other meat and toss until warm throughout.Push noodle mixture aside and scramble egg into the wok or pan.
