1/2 cup navy beans, canned
1 can diced tomatoes
1 can Rotel tomatoes, mild
3 carrots, peeled and chopped
2 parsnips, peeled and chopped
1 turnip, chopped
1/4 cup fresh parsley, chopped
2 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. dried basil
1/2 tsp. dried thyme
4 cups (about 1/2 10 oz. bag) fresh baby spinach
1/4 cup small soup pasta
1 cup red table wine

Here is how you make Everything But the Kitchen Sink Minestrone:

Heat oil over medium heat in a large stock pot. Saute onion, celery, garlic, green beans, zucchini, carrots, turnips, and parsnips in the pot for 5 minutes or until onions begin to turn translucent. Add broth to pot, along with tomatoes, and spices. Bring to a boil and allow to simmer for 20 minutes.Add canned beans and pasta and cook for an additional 15 minutes. Add spinach and wine and cook another 5 to 10 minutes or until of desired consistency. Adjust seasonings if necessary.
