0.5 cup, chopped Peppers, sweet, red, fresh

Here is how you make Vicki's Morning "hash":

Preheat oven to 375 degrees. Spray Pam in medium size non stick skillet. Chop mushroom and red pepper - sautee until soft taking care not to burn! Add 1/2 package of baby spinach tearing leaves as you add them. Place on medium heat and sautee adding 2-3 tbsp of water to prevent burning. While cooking prepare the eggs- crack 2 eggs and place in mixing bowl (medium size). Separate and add 4 egg whites. For richer taste add almond milk noted above. Remove vegetable mix from stove and allow to cool. Add onion and garlic powders to mix and the CRITICAL McCormick's bacon and chive seasoning. Caution is a bit salty so if watching your sodium intake please factor this in. Whisk eggs, whites and milk along with pilfers and a dash if himalayan salt. Set aside. Prepare pie pan spraying with Pam. Place vegetable mix into eggs. Fold in carefully and completely. Garnish top with red onion tiny wedges arranged as crescents. Pour into pie pan, level and bake for at least 30 minutes - its done when top is raised and dry. For an elegant touch sate veggies in 2 tbsp of your favorite chardonnay.
