1.) Whisk Dry Ingredients in large bowl. (Not quinoa)2.) Puree 3-5 Cups of Spinach with 1/4 Cup unsweetened vanilla soymilk in blender to make 1 cup of spinach puree. Empty in small bowl.3.) In same blender add banana, oil, egg, honey, and vanilla. Puree until smooth and add to small bowl.4.) Gently combine wet and dry in the large bowl. 5.) Zest lemon over bowl and add cooked quinoa. Fold until mixed.6.) Fill up muffin tin and sprinkle with raw sugar.7.)
