Here is how you make Spiced Zucchini Bread or Muffins:

Makes 20 muffins, 1 large loaf or 2 small loaves.Preheat oven to 325 degrees. Grease muffin tin or grease and flour loaf pan.- Mix together the dry ingredients: flour, cinnamon, ginger, baking soda, baking powder, salt and oats.- In a separate bowl, cream together the sugar and butter. Blend in the molasses, vanilla extract and one egg white at a time until all are well mixed. - Slowly add the dry ingredient mixture to the wet. Make sure it's well incorporated, but don't over-mix.- Once mixed together, add milk to thin batter. Then fold in the zucchini and the cranberries.- Muffins: Use an ice cream scoop to get equal amounts of batter in each cup. Bake for 15 minutes, until a toothpick inserted in the center comes out clean.- Loaf: Scrape batter into the prepared pan and bake for 60 minutes until a toothpick inserted in the center comes out clean.- Once cooked, allow to cool for 10 minutes before turning out of the pan. Once turned out, allow the loaf to cool for an additional 10 minutes before slicing.
