Spray coat a muffin pan. Separate eggs and place egg whites in medium bowl. Beat eggs until frothy. Add cream of tartar and beat until stiff peaks form. In a small bowl combine egg yolks, soy flour and sugar. Mix thoroughly. Gently fold into egg whites. Fill muffin cups 2/3 full (about 6).
