This definitely isn't a cake type muffin but they are yummy and about 1000 time better than metamucil. :) Substitution ideas are included. In a separate bowl, mix together the wet ingredients (the rest of the ingredients). Dump the wet ingredients into the dry ingredients and stir until they're just mixed together. Divide up the batter into 12 muffin cups. As this recipe is low-fat I suggest that you don't use paper lined pans as the low-fat muffins tend to stick to the paper. Some people spray the papers but I've never tried this. Bake a 350F for 15-20 minutes or until a toothpick inserted into the centre of a muffin comes out clean.--------------------------Substitution Ideas:Oatbran: try whole wheat flour, wheat bran or more ground flax.Carrots and/or Apple: try grated zucchini or substitute more apples for the carrots or more carrots for the apples. Applesauce can also be used in place of the grated apples.Egg: you can just skip the egg if you want to. The flax is a natural egg substitute in baking.Sugar: Any other sweetener.Milk: Try prune juice. You'll want to decrease the sugar if you go with this option.You can obviously also add spices like cinnamon if you like. I'd suggest about 2tsp of cinnamon per batch as a starting point.
