These muffins were inspired by recipes for zucchini, carrot and banana breads. I've substituted most of the fats with applesauce. Since the applesauce and fruits add sweetness, I've also eliminated some of the sugar AND substituted with honey.

1 C ea. shredded zucchini, green apple and carrot
2 mashed ripe bananas
1/2 C sugar
1 C honey
1/2 stick unsalted butter
2 C unsweetened applesauce
1/2 C nonfat milk (add 1 Tblsp lemon juice and let sit - substitution for buttermilk)
1 C Egg Beaters (Original or Whites)
2 large eggs
2 tsp vanilla (good quality is best)
5 1/2 C whole wheat flour (I used pastry flour)
3 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground clove
2 tsp salt
1 C chopped nuts (optional)
1/2 C dried unsweetened cherries


How Do I Make Loaded Reduced-fat Muffins?

Here is how you make Loaded Reduced-fat Muffins:

Preheat oven to 400F. Mix wet first 13 ingredients. Add dry ingredients and mix only until combined (if you overmix, you'll end up with chewy dense muffins). Add nuts and cherries, if desired. Line regular size muffin tins, and spray them with cooking spray (since there is less fat, the muffins will stick to the liners if you skip this step). Using an ice cream scoop, fill liners (should be 2/3 full). Bake for 10 to 15 minutes until a toothpick inserted into one of the center muffins comes out clean. Check each minute after the first 10.
