1 cup skim milk
3/4 cup unsweetened applesauce
1 tsp vanilla extract
10 -12 tsp of your favourite jam/preserves - depends on your muffin cups mine made 11.

Here is how you make Low Fat Jam Muffins:

Preheat oven to 400F. Grease muffin tin (if you use paper liners, spray them with cooking spray. With no oil or butter in the recipe, the paper will be glued to the muffin if you don't).In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. In a small bowl, beat together the egg, milk, applesauce, and vanilla. Add the wet mix to the dry, and gently mix together just until all the dry bits have been absorbed. Do NOT overmix. The batter should be lumpy, not smooth. Fill the cups 1/3 full. Drop about 1 tsp of jam (I used raspberry) into the centre and cover with another layer of muffin mix.
