I used a recipe from a Bob's Red Mill package as a 'blueprint', but then altered it to make it more healthy. There's no sugar in here, only the sweetener: blue agave nectar. Also, there are no animal products used. No eggs, but that's why I used the kuzu root. If you can't find the kuzu root, I think cornstarch might work - but I've never tried it so be aware of that. I also added more of a variety of dried (or in the case of chopped dates - pseudo-dried) fruit and some orange zest. So enjoy, and let me know what you think!

1/2 t salt
2 t baking soda
1 t baking powder
2 T cinnamon
1/3 C raisins
1/3 C dried cranberries
1/4 C dates, chopped
1 C chopped walnuts
2 T orange zest

1 C (+) soy milk
1 T kuzu root
1 t vanilla
1 1/2 C shredded carrots
2 shredded apples
1 C agave sweetener

Here is how you make Good Morning Sunshine Muffins!:

Mix the flour, oat bran and flax seed together in a large mixing bowl. Add the next 9 ingredients - the dry and lumpy stuff - into the same bowl. In a separate bowl, add the kuzu root to the soy milk and blend until smooth, then add the vanilla, carrots, apples and agave. Mix together.Dump the milk mixture into the dry ingredients and blend. If the mixture is too dry, add more soy milk to make it the consistency of a thick muffin batter.Put the batter into papered muffin pans (for easy clean-up!) and bake at 350 degrees for 20-30 minutes.Yield: 24 (nutrition-filled) muffins!Number of Servings: 24Recipe submitted by SparkPeople user CINOBIA.
