Here is how you make Vegan Muffins:

Mix dry ingredients - whip the tofu and add 1/2 cup of water and applesauce until blended (could use a food processor as well) - mix into the dry ingredients and add up to another 1/2 cup of water until the mixture is the right consistency (a little thicker than pancake batter). You can fill greased mini muffin tins, or just plop out spoonfuls onto parchment paper on a cookie sheet and make them like cookies.
