1 T. Sherry
2 T. Ketchup
1 T. Dijon Mustard
1/2 tsp. dried thyme
Dash of hot pepper sauce
1 C. toasted pecans, finely chopped

Here is how you make Toasted-Pecan and Mushroom Burgers:

Makes 6 servingsPreheat oven to 400F. Crumble tofu with a fork. Place between paper towels to drain.Heat the olive oil in a skillet over medium heat. Add onion, carrot and garlic and cook, stirring occasionally, until vegetables begin to soften, about 5 minutes. Add mushrooms; cook, stirring occasionally, until most of the moisture evaporates. Add sherry; cook, stirring occasionally, until moisture evaporates. Cool slightly.In a food processor, combine tofu, veggie mixture, ketchup, mustard, thyme, salt, hot pepper sauce and pecans. Pulse just until mixed. Using about 1/3 cup of mixture for each, shape into patties.Arrange patties on a baking sheet that has been sprayed with nonstick cooking spray.
