Brown the onion and garlic slowly. Drain mushrooms and add carefully to saucepan. Be careful of splashback. Pour a thin layer of enchilada sauce on the bottom of a 9x9 glass pan. Once the mushrooms have browned, spoon a small amount into a tortilla. Wrap tortilla around mushrooms and place seam down on bottom of pan. Pour remaining enchilada sauce evenly over enchiladas. Sparingly place cheese over each enchilada. Bake at 350 degrees for 20 minutes to melt cheese. After letting them cool, serve two enchiladas to each person.
